Blender Egg Crepe Wrap (Print)

Thin, frothy egg wraps filled with savory or sweet ingredients for a quick meal.

# Ingredients:

→ Egg Crepe

01 - 4 large eggs
02 - 2 tablespoons water or milk (dairy or non-dairy)
03 - Pinch of salt
04 - Pinch of black pepper
05 - 1 teaspoon olive oil or butter (for cooking)

→ Suggested Fillings

06 - 1.75 oz baby spinach leaves
07 - 2 slices smoked salmon or 2 slices cooked ham
08 - 2 tablespoons crumbled feta or shredded cheese
09 - 1 small tomato, thinly sliced
10 - 1/2 medium avocado, sliced
11 - Fresh herbs such as chives, dill, or parsley

# Instructions:

01 - Place eggs, water or milk, salt, and black pepper in a blender. Blend on high for 30 to 45 seconds until very frothy.
02 - Warm a non-stick skillet over medium heat and brush lightly with olive oil or butter.
03 - Pour half of the egg mixture into the skillet, tilting to coat the bottom in a thin, even layer. Cook for 1 to 2 minutes until the edges lift easily and the bottom is set. Flip carefully and cook for an additional 30 seconds. Transfer crepe to a plate.
04 - Repeat the cooking process with the remaining egg mixture to form a second crepe.
05 - Arrange desired fillings in a line down the center of each crepe.
06 - Fold or roll each crepe to enclose the fillings. Serve immediately while warm.

# Pro Tips:

01 -
  • It's naturally gluten-free and low-carb, so it works for almost any dietary preference without feeling like you're compromising.
  • The crepes stay tender and don't require special skills—even a slightly imperfect flip tastes wonderful.
  • You can fill them with whatever's in your fridge, making them endlessly adaptable for breakfast or a light lunch.
02 -
  • Don't skip the blending—those extra 15 seconds of whipping air into the eggs is what makes them puff up and stay tender instead of rubbery.
  • The first crepe is always a bit of a test; if your pan temperature is off, you'll know immediately, so adjust the heat for the second one without hesitation.
  • A crepe that tears a little is still delicious wrapped around fillings—perfection isn't the point, taste is.
03 -
  • If you want extra flavor, add a small pinch of dried dill, chives, or even nutmeg to the batter before blending—it transforms the whole thing.
  • A non-stick skillet that you actually trust makes all the difference; an older pan that sticks will fight you the whole way.
  • Pair these with a simple side salad dressed in lemon and olive oil to feel like you've made a real meal instead of a quick breakfast.
